Baked Goods
Blueberry Muffins
Serves: 1 muffin, makes 12 muffins
Ingredients:
- 2 cups flour
- 1 cup Vanilla Personal Edge® Fat
Metabolizing Drink Mix
- 3/4 cup sugar
- 2 tsp. baking powder
- 1/2 tsp. baking soda
- 1 tsp. cinnamon
- 1/2 tsp. salt
- 1 1/4 cups orange juice
- 2 eggs
- 1/3 soy oil
- 3/4 cup frozen blueberries
- Topping
- 1/8 tsp. cinnamon
- 1 T. sugar
Instructions:
- Preheat oven to 400 degrees.
- In a large bowl, combine flour,
Vanilla Personal Edge® powder, sugar, baking powder,
cinnamon, baking soda and salt. Set aside.
- In a medium bowl, beat orange juice,
eggs, and oil until thoroughly mixed. Add to dry
ingredients, mixing until just combined.
- Fold in blueberries.
- Spoon batter into prepared muffin
tins.
- Combine cinnamon and sugar for
topping and sprinkle over top of muffins.
- Bake for 20 minutes.
- Cool on wire rack.
