Spicy Soy Corn Bread
Serves: 12
This is a great quickbread to accompany
the Soy Chili, or to serve with a summer barbecue. The healthy
soy protein twist is an added plus.
Ingredients:
- 1 1/4 cups all purpose flour
- 1 scoop Health Source® Vanilla
Protein Shake Powder
- 3/4 cup cornmeal
- 2 tsp. aluminum free baking powder
- 1/2 tsp. salt
- 1/4 cup sugar
- 1 tsp. chili powder
- 1 1/2 cups soymilk, such as Veggie
Milk®
- 2 T. vegetable oil
Instructions:
1. Preheat oven to 400°F and grease an
8"x8" square pan.
2. In a mixing bowl, combine flour,
protein powder, cornmeal, baking powder, salt, sugar, and
chili powder; set aside.
3. In another bowl, combine soymilk and
oil. Fold flour mixture into soymilk mixture, stirring until
just moistened.
4. Place in greased pan and bake for 25
minutes.
