Soy Recipes -  Breakfast

Whole Grain Pancakes

Serves: 8 4-inch pancakes, 1 pancake per serving

Ingredients:

  • 1/4 cup unbleached flour
  • 1/4 cup whole wheat flour
  • 1/4 cup cornmeal
  • 2 scoops GeniSoy® Ultra-XT Protein Powder, GeniSoy® Ultra-XT Vanilla Shake
  • 2 tsp. non-aluminum baking powder
  • 1/4 tsp. salt
  • 1 1/3 cups soymilk or water
  • 2 Tbsp. Oil

Instructions:

  1. Mix the ingredients together
  2. Pour in the soymilk or water and oil, and stir just until moistened
  3. Spoon onto a hot griddle, and spread slightly with the spoon if necessary
  4. Cook on both sides until browned
